Review: My Experience with Purple Carrot

I recently had the opportunity to review the Purple Carrot plant-based meal delivery service! For many vegans. new and old, coming up with new recipes and interesting meal ideas can feel like hard work. After a long day, I just don’t always have the energy to do much more than roast whatever is in the fridge and put it on quinoa. Here’s where Purple Carrot comes in. All of the recipes (I tried 3) came out fantastic. I was worried that things might be bland but everything was well seasoned and each was something I’d never attempted (and probably never would have attempted) making before. This video covers the Korean…

    ‘Italian’ Vegan Pasta Salad

I love carbs. LOVE THEM. When I decided to become vegan and realized I could quit my near 20-year pasta and bread embargo I was overjoyed. I mean, the animals get to live and now I do too. It’s a win-win! This pasta salad is a combination of all the things I love. It’s quick. You can easily make enough to feed an army. It’s great as leftovers. And it can be enjoyed hot or cold in both reasonable and ridiculously large quantities. Feel free to switch up the ingredients and spices to put your own spin on it. I call this version ‘Italian’ because that’s where I took most…

    Watermelon Cherry Blast

This is a riff off the Watermelon Lime Cooler recipe that ratchets up the healthy quotient (with help from a secret ingredient) on this refreshing summer treat. Everyone already knows that watermelon is good for you. But did you know that dark cherries aka ‘America’s Superfruit’ and celery (a bonafide nutritional powerhouse) are great for you, too? The Darker the Berry… Like most jewel-toned berries (blueberries, anyone?) dark cherries are brimming with antioxidants. One cup of cherries contains 90 calories and contains significant amounts of fiber, protein, and vitamin A and C, according to the United States Department of Agriculture . Cherries also have anti-inflammatory properties, making them beneficial for arthritis sufferings, melatonin,…

Are You Using These Vegan Apps Yet?

Apps as in ‘applications’ not ‘appetizers’ (although I prefer them to most things overall). If you’re a new vegan (or even an old one), the constant influx of information can be pretty overwhelming. While I encourage you to get used to reading (and understanding!) your food labels, these apps can go a long way towards helping you begin your vegan journey, stay vegan while traveling and speed up the grocery shopping process. There are, of course, tons of other apps out there, but these are the ones I reach for regularly. Full disclosure, I use an Android but I believe most if not all of these apps are available for…

What’s On the Menu: Week 2

It’s been a week….so how do I feel about meal prep? PROS Nothing like wandering to the fridge at any given time and knowing exactly what you are going to eat. Goodbye, guesswork! I know that I’m eating something healthy that will further my fitness goals. It’s a lot easier to avoid surprise dark chocolate covered cashew binges when my prepared alternative is staring me in the face. Huge timesaver during the week. If you worked late there’s no additional prep time for dinner – just pop the top and get to munching. Fewer dishes – most of the time. Because you prepared your food personally, you know how it was made and…

I recently did a 20 min interview with @thecommerc I recently did a 20 min interview with @thecommerciallandscaper (thx for having me!) about running a small business during a pandemic, problem-solving as a trust exercise, and how using technology to realize efficiencies gives people more time to be better...well, people while providing better service.

Believe it or not - my current industry has A LOT more overlap with landscaping than you might expect. 😅

+ I married my (pause for cliche) best friend - and have gorgeous pics thanks to @allisonslater

+ I became a first-time homeowner to a beautiful property I now get to renovate/restore with @theranchmineofficial

+ We adopted pug # 3 - Basil (red collar)

+ And next week I start planting the homestead I've been dreaming abt for the last 2 yrs as an @agriscaping FAB5 participant.

This year was HARD. And I know it was & still is much harder for some of you than it has been for me...for that, I am sorry. I kept my head down & worked because that's the only way I know of to feel less helpless when things get hard but I am so grateful to be able to say I genuinely feel the work I put in this year is paving the road to my future & I couldn't be happier about where I'm headed. 🙌🏾
This place is going to start looking very differen This place is going to start looking very different soon!

Crossed some MAJOR items off the to-do lists this weekend! I got some light equipment - like a mulch shovel - and finally purchased the first of our trees! Tropicals can be planted this time of year so that's what we'll focus on getting into the ground first - think varieties of Guava, Mango, Avocado and Banana. I may also plant some cover crops in a few areas to get our soil going. I've got some sunflowers that I'd love to experiment with. 💛
Y'all gone get this Easter drip - dinner or no din Y'all gone get this Easter drip - dinner or no dinner! 🤷🏾‍♀️

Trying on a few goodies from @grass_fields today. I've been eye balling their stuff forever and finally took the plunge! I really love the cut of their pants. You can beat a well-fitted wide leg. And the patterns are amazing. I've got a few headwraps that I think will be making an appearance later this week as well 😘

It's time to pick a gardening hat - A or B? 🤠 It's time to pick a gardening hat - A or B? 🤠

We're breaking ground this week for planting at our new home and as a woman in her mid-30s living in the desert I take sun protection very seriously. A has a flap in the back to protect your neck - a job my bun clearly already volunteered for 😅 - while B serves safari realness then unpins at the sides to become a fully wide brimmed hat.

Also, I never really decorated our bedroom and now that we're moving I have 0 motivations so...we're calling this 'boho minimalist' for now. 😅

Since we're focused on the planning and set up of Since we're focused on the planning and set up of the edible landscaping at our new home I'm only doing a few things on my patio this year.

I've already got radishes, carrots, beets, basil, marigolds and snap peas that I planted this winter + a lime tree, pomegranate tree, 3 goldfinger bananas and a dragonfruit that I hope to transplant to our new home. At our office we've already harvested swiss chard & kale twice so I'm starting new seedlings for the tower gardens there this weekend. Growing indoors means I can keep cool weather crops like lettuces, kale and chard going year round here in AZ.
